Chicken Pesto Artichoke Focaccia
Ingredients:
- Focaccia bread (sliced horizontally)
- Grilled chicken breast (sliced)
- Pesto sauce
- Marinated artichoke hearts (chopped)
- Sliced mozzarella cheese
- Fresh spinach leaves
- Olive oil
- Salt and pepper (to taste)
Instructions:
1. Brush the inside of both halves of the focaccia with olive oil. 2. Spread a layer of pesto on the bottom half of the bread.
3. Arrange grilled chicken slices and chopped artichoke hearts over the pesto.
4. Place sliced mozzarella on top of the chicken and artichokes. 5. Add a layer of fresh spinach leaves.
6. Season with salt and pepper.
7. Place the top half of the focaccia on, press down slightly, and cut into portions.
