Basil Pesto
This recipe makes about 2 cups of pesto. Once you make your own basil pesto, store bought will never taste the same. Sorry not sorry.
Ingredients:
2 cups fresh basil leaves (no stems)
2 tablespoons pine nuts (or walnuts)
2 large cloves garlic
½cup extra-virgin olive oil
½cup freshly grated Parmesan
Directions:
Combine basil leaves, pine nuts (or walnuts) and garlic in a food processor and process until very finely minced.
While pulsing, slowly drizzle in the oil & process until the mixture is smooth.
Add the cheese & continue to pulse, just long enough to combine all the ingredients thoroughly. Store in the refrigerator or freezer until you are ready to use it.
Serve with a knife or spoon with focaccia bread.
