Italian Focaccia Panini
If you don't have a panini maker, don't worry this is great as a regular sandwich as well. You can grill it in a pan like you would a grilled cheese even, there is always a way. I highly recommend a panini maker for all our sandwiches and for any future sandwich you make -even pb&j wow now that's a game changer- it is just one of those things you will get and then wonder how you lived without.
Ingredients:
- Focaccia bread (sliced horizontally)
- Sliced prosciutto, salami or pepperoni (grilled chicken is a great health-conscious option)
- Fresh mozzarella slices
- Sun-dried tomatoes
- Fresh basil leaves
- Balsamic glaze
- Olive oil
- Salt and pepper (to taste)
Instructions:
1. Lightly brush the inside of the focaccia bread with olive oil.
2. Layer slices of prosciutto and other meats (or chicken), fresh mozzarella, and sun-dried tomatoes on the bottom half of the bread.
3. Add fresh basil leaves and a drizzle of balsamic glaze. 4. Season with salt and pepper. I'd like to add this is a great time to use any leftover pesto or delicious dip you may have in your fridge.
4. If you are using a panini maker, now is when you would place your sandwich in there and grill it up before enjoying. If not then continue to step 5.
5. Cover with the top half of the bread, press down gently, and slice into portions.
