Mediterranean Tuna Salad Focaccia
Ingredients:
- Focaccia bread (sliced horizontally)
- Canned tuna (drained and flaked)
- Mayonnaise
- Chopped capers
- Diced red onion
- Sliced cucumber
- Sliced tomatoes
- Mixed greens (like lettuce and spinach or microgreens) - Olive oil
- Salt and pepper (to taste)
Instructions:
1. In a bowl, mix flaked tuna with mayonnaise, capers, and red onion.
2. Drizzle olive oil over the inside of the focaccia halves.
3. Spread the tuna mixture on the bottom half of the bread.
4. Layer sliced cucumbers, tomatoes, and mixed greens on top of the tuna.
5. Season with salt and pepper.
6. Cover with the top half of the focaccia, press down lightly, and slice into portions.
