Mediterranean Veggie Focaccia Sandwich
Ingredients
- Focaccia bread (sliced horizontally)
- Hummus (any flavor)
- Roasted red peppers
- Grilled zucchini slices
- Feta cheese crumbles
- Arugula
- Olive oil
- Lemon juice
- Salt and pepper (to taste)
Instructions:
1. Spread a generous layer of hummus on the bottom half of the bread. (See roasted red pepper hummus recipe or use store bought)
2. Arrange roasted red peppers and grilled zucchini slices over the hummus.
3. Sprinkle feta cheese and arugula on top.
4. Drizzle with olive oil and a little lemon juice.
5. Season with salt and pepper.
6. Cover with the top half of the bread, press down slightly, and cut into portions.
