Pear, Blue Cheese, Walnut Focaccia
This is a great meatless sandwich that has bold flavors and pairs wonderfully with white wines. Try crushing the walnuts or chopping them into rough bits to make them less of a mouthful in the sandwich. If you really need a meat in this dish grilled chicken is a great option. Roasting the pears adds a complex flavor to this dish as well. Great for sliders as a more filling appetizer too.
Ingredients:
- Focaccia bread (sliced horizontally)
- Sliced ripe pears
- Crumbled blue cheese
- Chopped walnuts
- Honey
- Baby spinach
- Olive oil
- Salt and pepper (to taste)
Instructions:
1. Drizzle the inside of both halves of the focaccia with olive oil.
2. Arrange slices of pear on the bottom half of the bread.
3. Sprinkle crumbled blue cheese and chopped walnuts over the pears.
4. Drizzle honey across the toppings for a touch of sweetness.
5. Add a layer of baby spinach.
6. Season with salt and pepper.
7. Cover with the top half, press gently, and slice into servings.
