Savory Focaccia "French Toast Bake"
Ok this is a one of a kind recipe you really have to just try to believe how good it is. This one is for my carb-lovers! Drizzle with my Hot Honey recipe and you will be in love.
Ingredients:
3 Cups Focaccia, 1-inch cubes. Toasted.
4-5 eggs Scrambled, do not oversaturate the bread.
2 Tablespoons of heavy cream
1 Tablespoon of fresh chopped oregano
1/8 cup of fresh chopped Basil
1/8 cup of chopped sun-dried tomatoes
1/8 cup of shredded parmesan cheese
1/8 cup of prosciutto or bacon crumbles (optional)
1-2 tablespoons of olive oil (for toasting the bread and coating the baking dish)
Directions:
1. Cube up 3 cups of focaccia. Cut bread into squares 1 in x 1 in and drizzle with olive oil lightly. Then bake until toasted, 325 degrees for 5 minutes rotating then 5 minutes more.
2. Scramble 4-5 eggs, add the 2 tbsp of heavy cream.
3. Add chopped basil & oregano, chopped sun dried tomatoes to the egg mix and add to a large bowl with the cubed toasted focaccia. Toss lightly, do not let it get soggy.
4. Transfer to a square pyrex 8-inch x 8-inch that is sprayed with olive oil & put directly into the preheated oven. Bake at 375 for 30 minutes. At 25 minutes, sprinkle with Parmesan cheese. Bake the remaining 5 minutes while cheese melts.
5. Take it out of the oven & cool slightly. Cut into squares. Serve and drizzle generously with FF hot honey sauce. Eat immediately. Garnish with fresh basil if desired.
This recipe is great with bacon & eggs. Drink pairings with this recipe include sangria, prosecco, wine, mimosas & micheladas.
