Turkey Pesto Focaccia
Ingredients:
- Focaccia bread (sliced horizontally)
- Sliced turkey breast
- Pesto sauce (try my recipe here)
- Sliced avocado
- Sun-dried tomatoes
- Provolone cheese slices
- Mixed greens (like spinach and arugula or microgreens)
- Olive oil
- Salt and pepper (to taste)
Instructions:
1. Spread a layer of pesto on the bottom half of the bread.
2. Layer sliced turkey, provolone cheese, and sun-dried tomatoes over the pesto.
3. Add sliced avocado and a handful of mixed greens.
4. Drizzle with a little olive oil and season with salt and pepper.
5. Close with the top half of the focaccia, press lightly, and cut into pieces.
